<p>Amazingly, it is as light as a feather (which would be a great boon to anyone with the misfortune to suffer from arthritis).<br />
I was brought up to believe that only a cast iron pan gave proper heat-distribution and eliminated hot spots, but Scanpan gives the lie to that old tale.</p>
